If Windows 10 automatically updates and reboots, how to replace it manually

Windows 10 is convenient, but sometimes I update it and then I say I need to reboot, but I turn off everything I'm working on and reboot it. How do I turn this off?

pu1. What version of Windows 10 do you use? If you use Enterprise or Pro version, that doesn't happen
