What's the reason for adding lemon juice to the dough?

Food

I was told to add lemon juice to the flour dough to make it more chewy, but does it really make it more chewy?

How does lemon juice work?

pu1. Flour contains gluten, which makes the flour chewy. If you knead it with lemon juice, it will strengthen the gluten and make it chewy

pu2. There is gluten-free flour that does not contain gluten, but if you use this, it doesn't get sticky even if you add lemon juice. If it's regular flour, it increases the chewyness.

pu3. I heard that adding oranges besides lemons has the same effect. The reason is because vitamin C in lemon or orange strengthens gluten in flour

pu4. I see. Thank you
